Recipe: Tender, Easy Ribs


I don't normally print recipes, but hey - maybe I should.  Giving credit where credit is due -- to the countless number of people out there posting their tried and true recipes all over the internet.

We made these ribs earlier in the week, and not only was it extremely easy, they were far better tasting than any ribs we've done before.  Be wary though - they do have a kick and spicy flair to them.  So, if you are not a fan of spicy, eliminate those ingredients.

INGREDIENTS:


  1. 2 racks of baby-back pork ribs (or whatever amount you have on hand)
  2. 1/4 c. BBQ (optional)

RIB RUB:

  1. 2 t. garlic powder
  2. 1 T. kosher salt
  3. 1 T. black pepper
  4. 1 t. jalapeno seasoning salt (optional)
  5. 1 t. cayenne
  6. 1 - 2 t. cumin
  7. 1 T. paprika
  8. 1 t. dry mustard
  9. 2 t. brown sugar
  10. 2 t. Worcestershire sauce
  11. 2 t. lime juice
  12. 1 t. Tabasco sauce

DIRECTIONS:

  1. Lay each rack out on a heavy-duty foil sheet.

  2. Mix rub into a thick paste and use your hands to rub it into the meat.  Rub a thin layer all over with leaving any gritty deposits.  Work into the meat for at least a minute.

  3. Wrap tightly in foil.

  4. Place all foil-wrapped racks on a rimmed baking sheet or large roasting pan.

  5. Bake at 300* for 2.5 hours or 250* for four hours.

  6. Remove the racks and carefully unroll the foil to see if they are done.

  7. Baste each side of racks with BBQ sauce and use your broiler to crisp them up for a few minutes.
